It was hinted at in Volume 12 that, in most normal cases, if an undead summoner dies, than his creations would be released from their bonds of obligation. We don't know if Ainz counts as a normal case. If players Auto-Respawn like in Yggdrasil, than they would most likely remain under his control. It is also likely that because Ainz creates rare and intelligent undead; that even if they gain free will, they may remain loyal to Nazarick. If they did go wild after such an event, the forces of Nazarick can force them back in line. Assuming they can bring themselves to destroy creations of Lord Ainz.
To be honest, we don't know what would happen.
As for whether or not it is evil to kill Ainz is tricky. Assuming that it is not in debate if killing Ainz is evil; but in wondering 'is it evil to kill him, because if we do, their will be an undead uprising.' I will say that it is 'dangerous' to kill him, maybe even 'wrong' to do so. But to call it 'evil', we would have to look at intent and care.
If you willing perform an action, with the intent to cause others suffering or harm, than you are committing an evil act. If you kill Ainz with the intent of causing an undead uprising, than that is evil.
Incidentally if you perform an act that could cause harm or suffering to another, with no regard for the safety and well being of that person, than you are committing an evil act. If you kill Ainz and do not care if an undead uprising were to occur, than that is evil.
If you wanted to kill Ainz without it being an evil act. Than you would have to show a great deal of care to the civilian population by minimizing or neutralizing the undead threat. Which you should do either before or after killing Ainz.
Long story short; yes Remedios Custodio is an evil person.
In volume 10 it says that when PA isnt in ainzes form the undead he is in control of freeze up, maybe something like that would happen. theres also some evidence to back that up in emissary of the king where the emissary cant decide if it should catch aura when she fell out of the tree and its said summoned monsters are too indecisive without orders from their master.

If you kill Hitler to take over the Nazis, than that is evil. Also the Nazis weren't holding the lands they had hostage or threating to murder indiscriminately if Hitler died.
In addition, given what I said before, Ainz is incredible evil for not saving the kid in his hostage situation. He prioritized his own gains over the life of an innocent child.
