The doppel is there to see who will quickly turn on Ainz when granted to oppertunity as well as hold a position of power over the people only to slowly convert them into loyal subjects, similar to how Momon is used. The battle with Jaldabaoth is being used in a similar manner in order to show that Ainz isn't like other undead that hate all living things. His death will be used to find his "enemies" or those hiding in the shadows that have been waiting to strike out. It can and will also be used to show the power he holds as if to say "He rules over death and therefore can not be killed/die".
That's what I think too. Still the story sometimes takes an unexpected turn, due to something Ainz does out of his need to "stay in character".
